I cook this when I meal prep for the week, as it easily lasts a few days in the fridge.

5 tips for cooking dinner fast

If you want to cook dinner super-quick (whether you have 15 minutes or 30 minutes to spend in the kitchen), you must be organized.

If you don’t have all your ingredients and equipment ready, you simply won’t get your meals done on time.

So here my top 5 tips to cook faster:

1. Organize your kitchen utensils and make sure you have sharp knives

This is cooking 101. Put your most-used tools in the drawer closest to where you work and get the things you rarely use out of the way. Honestly, things like Christmas cookie cutters and that banana slicer you bought in a moment of craziness won’t be useful while you cook dinner.

The only things you need around you are:

  • sharp knives
  • vegetable peeler
  • measuring cups and spoons
  • whisk
  • rubber spatula
  • wooden spoons
  • pots & pans

And I cannot stress enough how important it is to invest in some good quality knives. Cooking is just much harder, and it takes three times as long when you have to saw through your veggies instead of slicing them like butter. You just need a couple of good knives and your life will change forever.  

2. Keep pantry essentials accessible

Same as with utensils. Keep oil, salt, and pepper on your counter. And make sure things like sugar, vinegar, soy sauce, spices, and seasoning are easily accessible.

3. Read the recipe till the end before you start

Have you ever gone through a recipe only to find out halfway that your eggs need to be at room temperature or that you were supposed to warm up the oven? Make sure you read the recipe entirely before you start, so you’ll have no surprises.

4. Have all the ingredients on the counter ready to go

I still remember that time I cooked the driest muffins on earth. I was supposed to add oil halfway through, but I simply forgot to add it because I didn’t have it in front of me. Since that time, I have learned to set out all the ingredients I need in front of me on the kitchen counter before I start cooking. Having everything ready staring at you will not only speed up your cooking, but it will help you to avoid forgetting a vital ingredient. 

5. Multitask 

If you want to cook dinner fast, there is nothing more helpful than doing many things at once. A few examples are: chop onions while the oil is heating up in the pan, measure your pasta while you are bringing the water to boil, chop veggies for your salad while the chicken is marinating, wash dirty dishes or put them in the dishwasher while things are cooking in the oven. It takes a bit of time and experience, but multitasking will come naturally once you learn the basics.

What are good healthy dinners?
There are plenty of easy dinner recipes that are also healthy and quick to make! My suggestion is to favor plant-based dinners made with whole food.
Some examples are:
  • Healthy soups that use beans and legumes
  • Whole-wheat pasta recipes
  • Brown rice bowls
  • Sheet pan recipes (quick and easy, and you just need one pan with little clean up needed)
Remember always to include leafy greens or cruciferous veggies like broccoli, cauliflower, or arugula.

    I don’t know why recipes including chicken are on here, I have been a vegetarian my whole life and have never heard of chicken being a vegetarian food. I’ve been to many restaurants that i have never seen putting chicken on their vegetarian menu. Is this just me?

      Of course, chicken isn’t vegetarian lol!
      I am not sure why you thought it was! These dinner recipes include recipes for everyone: vegetarian, vegan, recipes with chicken, and fish. There are several headlines to clarify which section you are in.
      Sorry if the headlines aren’t clear or big enough!

✔Leaving my country and my family behind to start a new job in the UK without knowing anyone. I still remember the fear, traveling with all my belongings in a suitcase and the “what have I done” feeling, lying in a hotel bedroom alone that first night.⁣
⁣
✔Leaving the security of that job only 2 years later to move to London, accepting a job offer that paid way less with the hope to make more in the future.⁣
⁣
✔Leaving that job 12 years later to dedicate my time to my own business and to learn how to enjoy life more...⁣
⁣
Every time I took a new step forward, I was full of fear. Was that the right choice? What if it wasn't?⁣
⁣
But fear is what allows us to be better, to learn, to be brave.⁣
⁣
Let 2021 be the year to embrace your fear, and let it help you to empower you. 💪🙌💛

So today I have something sweet for you my friends! 🤩

It's not Christmas if the house doesn't smell like cookies! 

I love to make these soft, nutty chocolate hazelnut cookies pretty much once a week during the holiday season 🤤

The only problem is that when I bake them they don't last a day!

But if manage to bake them and don't eat them, you can even turn them into a delicious gift! 

What are your favorite cookies to bake for Christmas?
6 years ago, I was working like crazy, over 12 hou 6 years ago, I was working like crazy, over 12 hours a day...each day looked exactly like the next.⁣
⁣
I wanted things to change, but I didn't know what to do...How could I build the life I was longing for? I wanted to able to wake up without stress, without clients' emails waiting for me, without a list of problems longer than my notebook waiting to be tackled every day...⁣
⁣
That's when it hit me: I had to start my own business. I somehow convinced Dan that selling tea online was a good idea 😂 ⁣
⁣
But not any tea: organic tea, prepared in Sri Lanka, and with the option to add personalized messages on each box. It was called Foxy Tea, and it was our first go at starting an online business.⁣
⁣
I remember coming back from work at 9pm, printing labels and packing tea. Just adding stress to the stress lol!⁣
⁣
It was going pretty well, with some big shops in London wanting to stock it...But we felt it wasn't the right thing for us to pursue. We didn't feel excited 🔥⁣
⁣
But you know what? I am sooo happy we did it.⁣
⁣
It taught me so much about starting a company, product development, and wanting a business that was more hands-off and passive.⁣
⁣
And that has lead to starting Gathering Dreams exactly 2 years later. What a difference!⁣
⁣
But every time I think about that adventure, it reminds me of the importance of getting out of our comfort zone, and getting started.⁣
⁣

And I loved every minute of it. ⁣
⁣
It was last January...Covid at that time just started to break the news...We had a chance to go as Dan was nominated for an award. We were conflicted as we could only stay for 4 days and taking such a long flight for a short break was a bit of a stretch. ⁣
⁣
But you know what?⁣
⁣
I learned that you need to take every opportunity you get! And so we went. Little did we know that it would be our last adventure for longer than we thought!⁣
⁣
I love this quote:⁣
“Probably some of the best things that have ever happened to you in life, happened because you said yes to something. Otherwise things just sort of stay the same.”⁣
⁣
Take every opportunity life presents to you. You never know what will happen tomorrow, but you can live today as if it was your only chance to do what you love!⁣

I've been absent for a while as real life took over...and I am grateful for the extra time I have been spending with Dan and our families.⁣

In difficult times remember what really matters to you...and that's what I am doing.⁣
