Frozen Yogurt Bark

This healthy frozen yogurt bark with fresh fruit, crunchy granola, and nuts is the perfect snack for warmer days. It’s made with simple ingredients and is loaded with plenty of protein to tide you over until your next meal!

Ingredients

  • 2 cups Greek yogurt - use full fat, see note 1
  • ½ cup diced strawberries - see note 2
  • ¼ cup blueberries
  • ¼ cup raspberries
  • 2 tablespoons maple syrup - optional
  • ½ teaspoon vanilla powder - or 1 teaspoon vanilla extract
  • ¼ cup chopped nuts or granola

Instructions

  • Line a baking sheet with parchment paper or a silicone baking mat.
  • In a mixing bowl, whisk together the Greek yogurt, maple syrup (if using), and vanilla extract until smooth.
  • Spread the yogurt mixture onto the prepared baking sheet in an even layer, about 1/4 inch thick.
  • Sprinkle the diced strawberries, blueberries, raspberries, and chopped nuts or granola over the top of the yogurt layer.
  • Place the baking sheet in the freezer for at least 2 hours or until the yogurt is completely frozen.
  • Once frozen, use a knife or your hands to break the bark into smaller pieces.
  • Serve immediately or store in an airtight container in the freezer.

Notes

Note 1: I find that full-fat Greek yogurt makes a better bark texture, as the fat won’t allow the bark to solidify too much. So try to use full fat if possible.
Note 2: You can use frozen fruit, but I prefer to use fresh as I can chop it into smaller pieces.
How to store: You can store your yogurt bark in an airtight container in the freezer for up to a month. However, the texture and flavor may change over time, so it's best to consume it within a couple of weeks for the best taste and texture. If you find that the bark has become too hard after being stored in the freezer for a few days, you can let it sit at room temperature for a few minutes to soften before enjoying it.
