Bounty Balls

These rich and decadent Bounty balls are an easy, healthy version of the Bounty bars we loved as kids. With 5 simple ingredients, these coconut chocolate balls taste pretty much like the original, but they are made with wholesome ingredients. I warn you - don’t make too many as they are addictive, and you won’t be able to stop eating them!

  • Add the desiccated coconut, cold coconut milk, vanilla, and maple syrup to a food processor bowl. Process for a few seconds until everything is well mixed together.
  • With the help of a spoon or using your hands, roll the mixture into small balls and place them onto a baking tray or a plate. You should be able to make around 12 balls.
  • Place the balls in the freezer for around 10-15 minutes.
  • Melt the chocolate. Break the chocolate into small chunks, and put them in a heat-resistant glass bowl. You can melt the chocolate on a double boiler or in the microwave at 20 seconds intervals, stirring each time, until silky smooth (see note 2).
  • Using a fork, dip each ball into the melted chocolate, letting any excess drip off. Place the balls to cool at room temperature on a cooling rack or a baking tray covered with parchment paper. You can decorate them with a touch of shredded coconut before the chocolate hardens.
  • Keep them in an airtight container in the refrigerator or in the freezer until you are ready to each them.

Notes

Note 1: Use full-fat coconut milk and refrigerate it before use. I usually put it in the fridge the night before. 
Note 2: To avoid melting too much chocolate to dip the balls in, try to melt the chocolate in a small glass jar in the microwave. Or in any heat-resistant container that is tall and narrow. It’ll be much easier to dip your balls in it with a small amount of chocolate!
How to store: You can keep them in the fridge for up to 5 days. Or freeze them for up to two months. Let them thaw for a few minutes before eating them, but if it’s a hot summer day, you can pretty much eat them out of the freezer.
