Mediterranean Salad Dressing

This delicious Mediterranean Salad Dressing is versatile, bright, tangy, and perfectly smooth. It’s inspired by Italian Salads and Greek recipes. But you can also drizzle it over freshly cooked meat and fish or use it to marinate veggies. Anything goes!

Ingredients

  • cup freshly squeezed lemon juice - around 2 lemons
  • ¾ cup extra virgin olive oil
  • ¾ teaspoon sea salt
  • 1 tablespoon honey - optional
  • 1 teaspoon dried oregano - note 1

Instructions

  • In a small bowl or a jar, combine the lemon juice, extra virgin olive oil, salt, honey, and dried oregano. Whisk or shake the ingredients thoroughly until the dressing is emulsified and the salt is dissolved.
  • Use immediately or store in the fridge in a sealed container for up to 2 weeks.

Notes

Note 1 - Crush the oregano: Before adding dried oregano to the dressing, crush it between your fingers to release its essential oils. This will intensify the flavor.
