Ingredients

  • 2 cups spinach - firmly packed
  • 1 cup coconut water - or plain water
  • 1 ripe frozen banana - (see note 1)
  • 1 green apple - cored
  • ½ cucumber
  • ½ lemon - peel removed (see note 2)
  • ½ inch piece of fresh ginger - optional for added spice and detox benefits

Instructions

  • Add the spinach, coconut water, banana, apple, cucumber, lemon, and ginger to your blender (see note 3). Blend on high until everything is smooth and creamy (see note 4).
  • Taste and adjust if necessary. If you need it sweeter, you could add a little honey, agave nectar, or another ripe banana. If it's too thick, add a little more almond milk or water.
  • Pour into a glass and enjoy!

Notes

Note 1- Banana: Using frozen bananas will give your smoothie a thick, ice cream-like consistency. Just make sure to peel and slice your bananas before freezing them! I know it’s obvious, but you never know…
Note 2 - Lemon: When you peel your lemon, make sure you remove all the skin but also the white spongy part beneath it as it can taste quite bitter.
Note 3 - Variations: Feel free to play around with this recipe. You can add more fruits like berries, mangoes, or peaches for added flavors. Other vegetables like kale, celery, or zucchini can also be included.
Note 4 - Blender tips: If your blender isn’t very powerful, blend the spinach and ginger with the coconut water until it's a smooth green liquid. This helps ensure you don't have large pieces of leaf or ginger in your finished smoothie. Then add the rest of the ingredients.
Prep Ahead: If you're short on time in the mornings, you can prepare smoothie packs in advance. Just portion out your fruits, veggies, and seeds into individual freezer bags or containers and freeze. In the morning, dump the contents into your blender, add your liquid, and blend!
