This easy avocado pasta sauce is ready to rumble in just 15 minutes, making it an absolutely delicious pick for busy weeknights! Just throw the ingredients into a blender and sit down to the creamiest, most satisfying plate of pasta EVER.

Ingredients

  • 2 ripe avocados
  • ¼ cup fresh basil leaves - note 1
  • 2 cloves garlic - minced
  • 2 tablespoons lemon juice - about 1 lemon
  • 2 tablespoons extra virgin olive oil
  • ¼ cup pasta water
  • salt and pepper to taste
  • Optional: grated Parmesan cheese for serving
  • 12 ounces pasta of your choice

Instructions

  • Cook your pasta according to package instructions. Once cooked, reserve one cup of pasta water, drain the pasta, and set it aside.
  • While the pasta is cooking, prepare the avocado sauce. Cut the avocados in half, remove the pits, and scoop the flesh into a food processor or blender.
  • Add the fresh basil leaves, minced garlic, lemon juice, olive oil, and pasta water to the food processor or blender with the avocado.
  • Blend the mixture until smooth and creamy. If the sauce is too thick, you can add a bit more olive oil or a splash of water to thin it out to your desired consistency.
  • Season the avocado sauce with salt and pepper to taste, adjusting as needed.
  • Once the sauce is ready, toss it with the cooked pasta until well coated.
  • Serve the avocado pasta topped with grated Parmesan cheese if desired, and enjoy!

Notes

Note 1 - Herbs: You can experiment with other fresh herbs such as parsley, cilantro, or mint. Each herb will impart its own unique flavor to the sauce.
 
Note 2 - Add some nuts: Toasted nuts like pine nuts, almonds, or walnuts can give this sauce a crunchy texture and nutty flavor. Simply blend the nuts along with the other ingredients until smooth.
 
Note 3 - Spice it up: If you enjoy a bit of heat, add a pinch of red pepper flakes or a dash of cayenne pepper to the sauce for a spicy kick.
 
Note 4 - Lemon zest: For an extra burst of citrus flavor, consider adding some lemon zest to the sauce along with the lemon juice. 
 
How to store: It’s best to consume this pasta and sauce fresh. It’s so quick to whip up that I am sure you can make it from scratch, even on a busy day.
