Ingredients

  • 2 ripe avocados
  • 3 tablespoons freshly squeezed lemon juice - to taste
  • 2 tablespoons extra virgin olive oil
  • 1 small garlic clove - minced if you are using a fork to mash
  • ¼ teaspoon sea salt - more to taste
  • black pepper - or chili flakes for some heat
  • fresh herbs - for toppings

Instructions

  • Cut the avocado in half and remove the pit.
  • Use a spoon to scoop out the avocado flesh into a bowl.
  • Place all the ingredients in a food processor: avocado, lemon juice, salt, olive oil and black pepper.
  • Pulse until you reach the desired consistency. Some people like it chunky, while others prefer it smooth. You can also use a fork to mash the avocado until it reaches your desired consistency (note 1).
  • Give the spread a taste and adjust the seasoning as necessary. You may want to add more lemon juice or salt.
  • Use the avocado spread immediately or store it in an airtight container in the fridge (see notes below).

Notes

Note 1 - Use a fork: If you don’t have a food processor or are too lazy to use it, you can simply use a fork to mash the avocado. Then, add the other ingredients and give it a good stir to blend all the flavors.
How to store: Avocado spread tends to brown quickly due to oxidation.
To store it:
  • Option 1: Add a few drops of lemon juice on the top layer and press a piece of plastic wrap directly onto the surface of the spread, making sure there are no air bubbles.
  • Option 2: Instead of plastic wrap, pour a thin layer of olive oil over the top.
Store in the fridge but eat it within 1-2 days.
